PROPOSED ITINERARY DAY ONE

7:00am depart Direct pick up from your accommodation in Paris
Bailly la Pierre Production of the sparkling wines calles  "Cremant". It is a unique visit as the whlole cellars and the production of Bailly la Pierre wines are cut into the hill
Chablis The picturesque town of Chablis, 20km east of Auxerre, has made its fortune growing, ageing and marketing the dry white wines that have carried its name to the four corners of the earth. A remarkable Cistercian heritage with the abbeys of Pontigny and Reigny, the Grange de Beauvais or the Petit Pontigny, medieval villages, a multitude of churches and wash houses, that’s what awaits you
Stop in the vineyards Stop in vineyards to learn about the Chablis wines and the appelation. Time for great panorama pictures
Sightseeing of the old town Walk the streets of Chablis & sightsee the monuments of the old town. Learn about his past and current life of locals in this northern part of Burgundy

PROPOSED ITINERARY DAY TWO

Clos Veugeot Castle This magnificent wine-producing château (estate) provides a wonderful introduction to Burgundy's winemaking techniques. Originally the property of the Abbaye de Cîteaux, the 16th-century country castle served as a getaway for the abbots. Tours offer a chance to discover the workings of enormous ancient wine presses and casks. Even though the Chateau du Clos de Vougeot does not produce wine anymore, it stays the symbol of a millenary of Burgundy’s History. Stop in vineyards & sightseeing
Vosne Romanee The world's most famous vintage, Romanée-Conti is the located in the town of Vosne-Romanée, alongside other famous wines: Romanée-Saint-Vivant, Richebourg, La Tache... Tasting at a small local producer
Nuit st George / lunch The Land of Nuits-Saint-Georges is at the center of the Burgundian country and the heart of the Côte de Nuits, true "Champs Elysées" of Burgundy. It comprises twenty-five villages distributed among the hillside vineyards. The town itself is pleasant if unremarkable, and based along a long pedestrian street with a variety of shops, cafes and bars, including a couple of opportunities to buy the local wines
Hospice de Beaune The Hôtel-Dieu is a former hospital founded in 1443 by Nicolas Rolin, chancellor of the Duke of Burgundy, and his wife, Guigone de Salins. This magnificent Gothic hospital (until 1971) is famously topped by stunning turrets and pitched rooftops covered in multicoloured tiles. Interior highlights include the barrel-vaulted Grande Salle; the mural-covered St-Hughes Room; an 18th-century pharmacy lined with flasks once filled with elixirs and powders. And the multipanelled masterpiece Polyptych of the Last Judgement by 15th-century Flemish painter Rogier van der Weyden, depicting Judgment Day in glorious technicolour. (it is the unmissable crowning jewel of this museum)
Chateau Pommard (visit & tasting) Château de Pommard or originaly “Le Clos-Marey-Monge” is the largest private Clos in Burgundy. It’s a place where grand architecture and passionate winemaking converge among the vines. With almost three centuries of wisdom that has come from respecting and protecting Clos Marey-Monge, Michael Baum and Emmanuel Sala  are on a mission to protect the vineyard for another 300 years with Biodynamic viticulture.  (various kinds of tastings and visit experiences - best to be decided in advance)
Stop in the vineyards Stop in the vineyards to understand the wine growing in Burgundy. Learn about its rich past and the troubles of today. Some great villages with famous wines where to stop and discover such as Chassagne Montrachet & Pouligny Montrachet,  Auxey-Duresses, Mercurey, Savigny-les-Beaune, Aloxe-Corton, Gevrey-Chambertin, Fixin...

+/- 5:00pm drop off to your hotel in Beaune Beaune, became the unofficial capital of Burgundy wine. This thriving town's raison d'être and the source of its joie de vivre is wine: making it, tasting it, selling it, but most of all, drinking it. Consequently Beaune is one of the best places in all of France for wine tasting, and one of Burgundy's top tourist destinations.

Chateau Santanay (visit & tasting) Château de Santenay is one of Burgundy’s largest wine domaines. Its prestigious heritage, which comprises a remarkable Château with a glazed tile roof and 90 hectares of vineyards, is the product of a time-old legacy that is closely tied to the history of the Burgundy wine region.
Take a guided tour of the Domaine’s magnificent 9th-century vaulted cellars, the ideal opportunity to learn more about the wines of Burgundy ‘from the terroir to the cellars and from the vine to the glass’

Scenic route towards Chateauneuf
Châteauneuf-en-Auxois Châteauneuf-en-Auxois unfolds around a medieval fortress, erected on a rocky outcrop. The castle is a superb example of medieval military architecture. But don't forget to wander around one of the "most beautiful villages in France". The Châteauneuf-en-Auxois castle proudly dominates the Burgundy canal. It bears witness to XIV century military architecture

Useful informations

Good clothes and good walking shoes. The temperature of some cellars drops to a constant 10 °C (50° F)

Please note that the amount of wine in the glass to taste is low. This a common custom within Burgundy producers due to the rarity of the wines and the small amount of bottles that are produced per year. Some winegrowers do not produce more than 5000 bottles annually for the whole worlds demand.
